We went to the Fairy Su Vegetarian Restaurant in Beijing over and over again. The food was spectacular, the restaurant was immaculately clean, and the staff was incredibly friendly. We met Bing Bing (also known as “Claire”, her western name) on our second or third visit to the restaurant and after chatting for a while, she invited our family back to her kitchen to learn how to cook an eggplant dish, just for the fun of it. At that time (before Lydian developed her interest in cooking), John was our family’s chef so he was the one who did the cooking at the restaurant while Lydian and I just watched. Later, we went back to the Fairy Su Restaurant to teach the staff and Bing Bing how to cook potato soup. It was one of the most memorable things that we did while in Beijing.
